Pumpkin Cake recipe

A light, fluffy and delicious cake that combines the flavors and spices of Fall. Pumpkin takes center stage and is cooked to perfection with nutmeg, allspice, cinnamon and cloves in a cake that is surprisingly simple to prepare. While you may not be able to hand out slices of this magnificent cake to Trick-or-Treaters, it will certainly be the highlight of your Halloween season.

Ingredients:

  • 1 cup vegetable oil
  • 3 eggs
  • 1 15 oz can pumpkin puree
  • 1 tsp vanilla extract
  • 2 ½ cups white sugar
  • 2 ½ cups all-purpose flour
  • 1 tsp baking soda
  • 1 tsp ground nutmeg
  • 1 tsp ground allspice
  • 1 tsp ground cinnamon
  • 1 tsp ground cloves
  • ¼ tsp salt
  • ½ cup walnuts, finely chopped

Directions:

  1. Preheat oven to 350 degrees F (175 degrees C). Grease a 10-inch bundt or tube pan and set aside.

  2. In large bowl cream oil, beaten eggs, pumpkin and vanilla together.

  3. Sift flour, sugar, baking soda, spices, and salt together. Add slowly to pumpkin mixture and combine. Do not over-mix. Stir in chopped nuts and pour into prepared pan.

  4. Bake for 1 hour or until a toothpick inserted into the middle of the cake pan comes out clean. Remove from oven and let cool in pan for 5 minutes. Turn out onto a plate. Sprinkle with confectioners sugar.
